Ingredients:
2 tbsp. Dijon mustard
2 tbsp. chopped fresh thyme or 2 tsp. dried
2 tbsp. extra virgin olive oil, divided
½ tsp. salt, divided
½ tsp. freshly ground pepper, divided
1 1/2 -2 lb. bone-in chicken thighs, skin removed
2 medium yams, peeled and cut into 1-inch pieces
1 large red onion, cut into 1-inch wedges
Nonstick cooking spray

Instructions:
1. Preheat oven to 450 degrees. Combine mustard, thyme, 1 tbsp. oil and ¼ tsp. each of salt and pepper in a bowl; spread the mixture evenly on the chicken
2. Toss the yams and onion in a bowl with the remaining 1 tbsp. oil and ¼ tsp. each salt and pepper. Coat baking sheet with nonstick spray and place vegetables on the sheet. Place the chicken on the vegetables and place in the oven for ~30-35 minutes, stirring the vegetables once the chicken is cooked halfway through
